restaurant scene like few
other chefs. Respected &
admired worldwide, he has
become the epitome of the
'chef's chef'. A
culinary force of nature,
Everitt-Matthias has somehow
contrived to never miss a
single service since first
opening his restaurant - the
two-Michelin-starred Le Champignon
Sauvage - in
Cheltenham in 1987. In
recent years he has developed
a passion & fascination for
wild food, which has come to
inform much of his cooking,
helping to create a cuisine
unlike any other. Born
in Wandworth, London in 1960,
Everitt-Matthias, started his
apprenticeship at The Four
Seasons, London in 1978.
Between 1978 and 1987 he
worked at La Tante Claire,
Grand Cafe, Steamers, Fingles
before opening his own
restaurant in 1987. He
is the winner of numerous
awards including: |
