Alvarez Rabo is the pseudonym for an anonymous Spanish satirical and polemical humorist, cartoonist and illustrator; known for his controversial and 'politically incorrect' work.


Andoni Luis Aduriz is the founder chef patron of Mugaritz, a restaurant in San Sebastian that has held 2 Michelin stars since 2005 and regularly features in the top 10 restaurants in the world in the San Pellegrino World's 50 Best Restaurants.  Aduriz is known for his creative ingenuity and is considered one of the most influential chefs of these times.


Los 'Bajos' de la 'Alta Cocina' ('The Lows of Haute Cuisine') was commissioned in 2008 by Aduriz from Rabo to commemorate the tenth anniversary of Mugaritz. 


From a review (translated) in El Pais on January 7 2009:


"With a devastating acidity, the author reviews the bizarre universe that surrounds the community of cooks, a superhero sub-genre that he ridicules with hilarious cartoons in which he tries not to leave the puppet with a head. A little more than 100 pages is enough to attack gastronomic criticism and its intemperate judgments; against false guide inspectors, fatuous diners and artificial business meals, as well as against certain clients, such as the Tontolaba family,that is influenced by the capricious observations of the press.  Nor does he forgive haute cuisine and its meager quantities, including culinary creativity and its bad imitators. "Fashions are loaded by the devil," says one of his characters, "and they are always followed by the most insecure and less gifted." He also doesn't forget to poke fun at the methyl-cellulose and liquid nitrogen.  Sarcastic parody that sometimes borders on black humor and whose main protagonists, all Spanish cooks, turn into puppets with bulging eyes and pointed noses, who intervene in hilarious situations. Characters with recognizable nicknames -Juan Mari Achak, Martín Brasategui, Panti Santalucía, Carne Ruscapella-, who intervene in grotesque antics without leaving anyone blameless in this clever pathetic critical essay. Not even Ferràn Adrià or Aduriz himself are free of the tragicomic mockery."


An hilarious but important reference when considering the impact of the Catalan and Basque chefs of this time on the world of haute cuisine and fine dining.
