A small, but useful work, on making Tempe and Oncom with instructions for household and small scale manufacture of both Tempe (a traditional staple of Javanese cuisine) and Oncom (a traditional staple of Sundanese cuisine). Both are fermented products made with mold. Tempe is made from soy beans; Oncom is made from the byproduct of other foods e.g., soy pulp (from tofu), peanut press cake, cassava tailings and coconut press cake etc.
Apart from the two methods of production clearly described, there are four recipes for tempe and oncom side dishes and snacks.
