In 2016 Josh Niland opened the now universally acclaimed & instantly award winning Sydney fish restaurant St Peter. More recently Josh was shortlisted in the 2019 World Restaurant Ethical Thinking Awards; fueling the conversation he started in 2016 with his boundary pushing views on sustainable seafood.
In the past 2 years Josh has won just about every significant award in Australia for his ground-breaking approach to using the whole fish and wasting nothing. Most recently, Josh opened The Fish Butchery, Australia's first sustainable fishmonger which sells dry-aged, cured & smoked fish & offal to an eager public as well as supplying many of Sydney's best restaurants.
