On Sundays: Long Lunches Through the Seasons is a cookbook of memorable recipes and curated menus to be shared at the end of a week with good friends and family

Debut author, Dave Verheul is a highly acclaimed chef, who launched the celebrated Matterhorn restaurant in Wellington NZ, worked in London alongside Gordon Ramsay at fine diner The Savoy Grill, and when he first arrived in Melbourne his first local hit wine bar/ restuarant, The Town Mouse. Now a star in Melbourne’s ‘wine-dining’ scene, where he co-owns the acclaimed Embla with Christian McCabe (is it a winebar? is it a restaurant - who cares - its delicious!), Dave continues to receive rave reviews for his vegetable forward and deeply creative wine-friendly approach to dishes.

In On Sundays, Dave provides you with detailed instructions for making a selection of his classic dishes served at Town Mouse and Embla with a view to you making them part of your weekend rituals when food, slowing down and creating something beautiful to share with loved ones takes centre stage.

There are sixteen seasonal menus, each a gentle meal, focusing on excellent seasonal ingredients heightened by the use of innovative and interesting techniques and combinations. Think tuna carpaccio, capers, fermented buttermilk ricotta or hemp seed pavlova, lime fennel and green apple; preserved chicken, yuzu, kale and pine nut or oysters with chardonnay vinegar ice; barley koji creme caramel, stout and burnt pear or John Dory rillettes, blossom, capers, witlof.

In between menus Dave shares his views on foraging, unusual ingredients, preserving, elderflowers and many other fascinating topics. There is plenty of pickling and fermenting as well as the recipe for his fabulous bread.

All in all this is a wonderfully thoughtful and interesting book providing insights into and inspiration from one of Melbourne's most exciting wine-bar/restaurants.

As usual we will be cooking from the book and serving up tastes. We'll also be talking to Dave about his new project of producing small batch seasonal vermouth that reflects his approach to cooking (named 'Saison').

Please join us on Wednesday 17th April for yet another wonderful conversation this time with Dave Verheul exploring his exciting ideas for Sunday lunch.
