"My story is a slow and quiet one. It's about tradition and change, connection and absence, and a refusal to let go of impossible dreams"

In 2019, Chae caused a sensation in Melbourne when she opened her tiny Brunswick apartment to six diners per night, four times a week, with a waiting list that quickly became more than 8000 people long. She was named Gourmet Traveller's best new talent for 2021, and one of The Age Good Good Guide's chefs of the year for her medicinal style of traditional South Korean cooking. using made from scratch ferments, sauces, enzymes, vinegars and kombuchas. In 2023 Chae moved to Cockatoo on the outskirts of Melbourne where she has garned two hats in the Age Good Food Guide in 2023 and 2024 for her restaurant CHAE; which still only has six seats.

Chae makes verything from scratch in her home kitchen, from dubu (tofu) to gochujang, ganjang to kimchi. Here, in her first cookbook, Chae shares her philosophy of slow, seasonal, hand crafted food. Forget Korean barbecue, this is a real insight into the traditional and ancient cuisine of Korea.

We are very excited to be hosting Chae and her partner Yoora. You can expect bold and enlightening ideas and tastes, and a wonderful conversation.

As usual we will be cooking from the book and serving up tastes.

Please join us on Tuesday 6th August for a wonderful intimate conversation with Jung Eun Chai.

Tickets are limited.
